This position has a lot of responsibilities and your team is
counting on you. As a Tumbleweed Server Assistant, you have the opportunity to
impress every guest that enters the building. Whether you are bussing a
table, sweeping a floor, enthusiastically monitoring the dining room
cleanliness, you are building a relationship with the guest. Your number #1 priority is to make our guests feel welcome and
appreciated. You are going to learn a lot of ways to do this over the
next few days. But mostly, you’re going to be reminded to show our guests

As a Tumbleweed Server Assistant, your job consists of a wide
variety of duties. Some of the duties are shared with the Server; some
are shared with the Host/Hostess; some are yours alone. But they all share a
common goal; IMPRESS every guest. Today we are going to focus on the
What does it mean to ‘Bus’ a table?
Bussing a table means getting the table ready for the next
guest. In other words, bus means turn a dirty table into a clean
What does it mean to ‘Pre-bus’ a table?
Pre-bussing means removing dishes and trash from tables while
guests are still seated. Not interrupting or disturbing guests is a very
big part of being a great pre-busser.
What is your station or area of responsibility?
You are responsible for all tables and floors in the dining
room, all POSi server stations, restrooms, the dirty dish drop area and
sometimes the server alley. On some shifts, if more than 1 busser is
scheduled you may have a specific section of the dining assigned as your area
of focus, but don’t forget to help your team wherever you can when your section
is caught up. This must all be done with a sense of urgency.
Dish Drop Area:
The dish drop area is a very important area for you to maintain
for the benefit of the entire team. When you begin your shift make sure
it is ready:
Glass racks are empty and ready to fill
Garbage can is lined and not full
Dirty plateware is separated and organized by plate/dish size
Silverware soaking tub set up
Small dish soaking tub set up
