Overall responsibility for the Catering Operation; including achieving maximum profitability and guest satisfaction by supervising the selling of the catering function.
Assists leadership with managing human resources within the division. Monitor service and teamwork on a regular basis. Achieve catering revenue goals by developing and implementing sales strategies. Develop and implement sales strategies by analyzing current and potential business and identifying potential business. Establish catering sales goals in conjunction with the budget and leadership. Monitor call productivity and revenue goals by maintaining current sales action plans, establishing goals for each catering sales person and tracking results. Maximize guest satisfaction by communicating guest specifications to leadership. Review and document guest specifications and suggest alternatives as appropriate. Instruct guest on applicable liquor laws, hotel rules and regulations, etc. Follow up with guests to determine guest’s satisfaction with function; measure these results and establish strategies to improve the quality of the guest’s experience. Maintain the competitive status and profitability of the catering operation by monitoring industry trends and recommending appropriate action to be taken. Design future and present menus with Executive Chef. Develop and continually enhance relationships with corporate, community organizations, professional associations, and religious organization, etc., current and potential clients to maintain and increase awareness of the hotel and our market share. Responsible for managing accounts; select corporate, association and non-profit organizations.
Bachelor’s degree or equivalent education/experience. Five to six full years of employment in related position. Must have thorough knowledge of approved Responsible Gaming Program.
