Heidi's Restaurant Group is looking for a Director of Culinary to oversee operations for our three restaurants with growth possibilities. We have two locations of Croissants Bistro and Bakery (Breakfast and Lunch) and our Wine and Fish House, Hook & Barrel (Dinner only).

To perform this job successfully, you must be able to perform each essential task. The requirements listed below are representative of the knowledge, skill and/or ability required:

  • Monitor food production in regards to costs & consistency
  • Supervise the preparation and cooking of all food items
  • Manage kitchen team through scheduling, payroll, training, coaching, evaluating and hiring
  • Manage other key culinary leadership roles including supervisors and Sous Chefs
  • Understand and abide by all DHEC requirements
  • Develop and implement creative menu items within the restaurant concept
  • Maintain cleanliness in all areas of the kitchen and back of house
  • Maintain positive communications between BOH & FOH staff
  • Plan, coordinate & implement menus for special events and holiday functions in cooperation with dining room & beverage managers
  • Mentor our team towards achieving exceptional guest service and employee satisfaction results

Qualifications:

· 10+ years in a leadership role in kitchen operations

· Strong leadership, supervisory and communication skills

· Passion and extensive knowledge of seafood and the restaurant industry

· Proven ability to establish and maintain effective working relationships with employees, guests and vendors

· Must be extremely organized

Schedule:

· Includes evenings, weekends, some holidays, and on call. Closed on Sundays.
