We are currently recruiting versatile, adventure seeking Line Cooks, Prep Cooks, and Commissary Cooks for term and permanent positions at the Ptarmigan and the Tundra Pub!

JOB SUMMARY

Line, prep, and commissary cooks work collaboratively to ensure the efficient preparation and delivery of high-quality recipes in Frontiers North Inc.’s (FN) kitchens. Line cooks handle cooking, plating, and assembling dishes during service while maintaining quality, timing, and presentation standards. Prep cooks focus on ingredient preparation, including chopping, portioning, and organizing, to set up the kitchen for smooth service. Commissary cooks prepare and organize food in large batches in FN’s centralized kitchen for tours and activities groups, travel meals, catering events, and other FN kitchens. All roles uphold food safety, cleanliness, and inventory management, contributing to a cohesive kitchen operation to deliver excellent dining experiences that align with (FN) values of sustainability and corporate social responsibility.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Line Cook Responsibilities

Food Execution:

  • Ensure food quality, portion control, and plate presentation through 100% recipe adherence.
  • Prepare menu items during service while maintaining consistency and timing standards.
  • Complete all orders with uncompromising quality and consistency.

Kitchen Operations:

  • Monitor cleanliness and compliance with safe food handling and health and safety standards.
  • Maintain all work areas, utensils, and equipment in clean and sanitary condition.
  • Ensure food is prepared, held, and served at correct temperatures and appearance.

Coordination & Communication:

  • Communicates effectively between shifts, ensuring stations are stocked and ready.
  • Liaise with the supplier delivery team to verify accuracy and product quality.
  • Provide relevant information on product quality and availability to management.

Prep Cook Responsibilities

Food Preparation:

  • Prepare ingredients and complete daily prep sheets.
  • Monitor daily prep production for consistency and readiness.
  • Ensure proper rotation, labeling, and dating of all prepped products, ensuring compliance with first-in-first-out (FIFO) protocols.

Stock and Inventory:

  • Inventory food products, identify shortages, and inform management.
  • Stock and prep stations for service in advance of shifts.

Kitchen Support:

  • Assists with setting up the kitchen for smooth service.
  • Prepare components to support line cooks during busy periods.
  • Adhere to food safety standards during all prep tasks.

Commissary Cook Responsibilities

Food Preparation:

  • Prepare large batches of food for tours and activities groups, travel meals, catering events, and other kitchens.
  • Follow detailed instructions and recipes for consistency, adjusting preparation techniques for dietary restrictions or special orders.
  • Ensure prepared food and meals consistently meet quality standards.
  • Ensure proper rotation, labeling, and dating of all prepped products, ensuring compliance with first-in-first-out (FIFO) protocols.
  • Adhere to food safety standards during all prep tasks.

Stock and Inventory:

  • Inventory food products, identify shortages, and inform management.
  • Stock and prep stations for service in advance of shifts.

SPECIFIC KNOWLEDGE, SKILLS, AND ABILITIES

  • Post-secondary education in culinary arts is an asset.
  • Minimum of 2-years culinary experience in a full-service restaurant
  • Minimum 1-year experience in a Line or Prep Cook role
  • Valid Food Handlers certification.
  • Effective written and verbal communication skills in English; other languages are an asset.
  • Strong time management skills and the ability to prioritize tasks with minimal supervision.
  • Flexible and resourcefulness to problem solve challenges that arise from working in a remote, northern location.
  • Excellent interpersonal skills, empathy, and patience.
  • Must be able to work individually and as part of a team.

SPECIAL CONDITIONS OF EMPLOYMENT

  • Job is in Churchill, Manitoba, a remote, northern location.
  • Commercial kitchen setting.
  • Must be able to stand for 8-12 hours per day.
  • Must be able to safely lift 23 kilograms (50 pounds).
  • Must be able to work near a variety of potential food allergens including, but not limited to, citrus, strawberries and other fruits and vegetables, peanuts and other nuts and legumes, pork, poultry, beef, bison, shellfish/seafood, fish, and other meats.
  • Dress code is in effect.
  • Must remain free of impairment from drugs, alcohol, or other mental and physical conditions while on duty and/or on call to work.
  • The ability to travel to Churchill, Manitoba by air and/or train is required. 
  • Closed-toe, slip-resistant, comfortable footwear is required. 
  • Shared staff housing is available.
  • Overtime may be required during evenings, weekends, and on holidays.
  • Must be legally entitled to work in Canada.
