The Director of Food & Beverage is responsible for leading operations of multi outlet food and beverage services. Outlets include on/off premise catering, casual dining and outside bars. The position works cooperatively with the Executive Chef and directly leads, trains and develops front of the house leadership staff.

Meet and exceed guest expectations

Hire, train and motivate team, prepared to hit each season in stride
Work with the marketing department and senior leadership to maximize revenue opportunities throughout all outlets
Develop and institute new food menus
Meet all deadlines for menu development, costing and implementation
Work in harmony with the banquet sales team to ensure we are most competitive in our market
Maximize the Avalon Brew Pub brewing output and brand labels
Maximize the benefits of all ICONA technology platforms
Analyze and monitor all granular metrics around menu profitability, sales leaders, COGS, Labor, waste and theft
Create and monitor the annual operating budget
Analyze and monitor profit and loss statements
Set clear performance metrics with all appropriate team members
Always extend professionalism and courtesy to team members
Lead by example demonstrating self-confidence, energy, and enthusiasm.
Provide associates with the necessary tools, training, and equipment they need to perform their job
Develop and execute all SOPs for existing and new food & beverage outlets
Circulate throughout outlets, courteously and warmly greeting guests and associates
Ensure service is prompt and courteous
Establish, direct, and review performance standards in food preparation, purchasing, production to ensure effective, controlled, and coordinated efforts are achieved
Monitor, direct, and coordinate effective sanitation, cleanliness, and organization effort in food & beverage operating areas
Ensure proper staffing procedures
Direct, review liquor procedures to ensure inventory turns and security
Be knowledgeable and comply with federal, state and local laws and regulations as it relates to food and liquor
Ensure food and beverage staff has all been trained in responsible alcohol service.
