Fishbones Oyster Bar & Seafood Grill

Fishbones Oyster Bar & Seafood Grill is one of Charlottetown’s favourite summer restaurants. From ship to shore, their team offers the best in fresh local seafood along with some of the Island’s best products. Each season the Chef and their team always produce the summer eats their guests are looking for, whether it’s from the restaurant’s kitchen, or Charlottetown’s one and only rooftop grill – a culinary opportunity like none other in the city.

As Head Chef, You Will

Be customer focused and take a “hands on” management approach but will be flexible to change. The Head Chef will oversee all kitchen operations. They will have a strong knowledge of forecasting, food costing, inventory, payroll scheduling, labour costs and the development and leadership of line level talent.

  • Demonstrate and communicate the Fishbones vision to all team members and lead by example
  • Ensure team members provide  a memorable guest experience through coaching and fostering a positive working culture b reinforcing the MHG values daily, exciting team members with their positive nature and leadership
  • Demonstrate and promote a kitchen culture that revolves around the enjoyment of cooking creativity, food, and working as a team
  • Build and maintain relationships with team members both back and front of house
  • Be an influential presence in the kitchen that fosters growth, learning and development
  • Work with the Sous Chef, Prep Manager and team members to meet all projected goals when it comes to cost, waste and labour control
  • Oversee ordering of inventory and daily prep work
  • Work in the line with team members, maintaining a high level of food quality
  • Oversee kitchen operations and cleanliness
  • Perform all back of house crew duties as needed including prep and supportive work, butchery, working all line stations and expediting dishes

Who You Are

  • Possess a passion for the culinary experience and the food service industry
  • Ability to take direction, work calmly under pressure and delegate tasks and provide direction as needed to team members
  • Work well with others, enjoy teaching team members, and fostering growth and development of top line talent
  • Possess a desire for personal and professional development


What You Bring

  • Experience cooking in a full service high volume restaurant
  • Previous experience of 2+ years in back of house management
  • Previous experience in a Head Chef role considered an asset
  • A culinary diploma or degree is considered a strength

This is a seasonal position with potential for full time permanent employment upon season end.
