Cash Casino LP was recently acquired by a new ownership group and is undertaking a transformation and modernization of its casino businesses located in Calgary and Red Deer. We are an Alberta-based, family-owned business looking to grow our casino’s team. Our current locations include Cash Casino Calgary, Cash Casino Red Deer and ACE Casino Calgary.  Plans are underway for the construction of a brand-new casino facility located at the Calgary International Airport.

The Position

This is a great opportunity to join Cash Casino and ACE Casino as the Culinary Operations Manager.  The position is based in Calgary and supports Cash and ACE Casinos in Calgary and Red Deer.

The Culinary Operations Manager will report directly to the F&B Director.

Key Roles & Responsibilities:

Operational Support:

  • Leads by example, offering a hands-on management style with strong leadership skills.
  • Providing leadership, training and development for the culinary team.
  • Supports the line staff to consistently deliver on food quality, timing and brand standards.
  • Ensures daily operations function as efficiently as possible to maximize a positive dining experience for our guests.
  • Ensures daily, routine and thorough line checks are completed by the culinary team; reviewing food quality and inventory levels, addressing any concerns prior to service.
  • Establishing a ‘promote from within’ culture to identify key leaders on their team and providing directives to help associates achieve their goals.
  • Fosters a culture of recognition and reward focused on the achievement of financial targets, food quality and guest retention.
  • Engages and interacts with guests and front-line staff to build rapport and gain valuable insight into our culinary program.
  • Attends and actively participates in bi-weekly store-level management meetings.

Health & Safety Compliance:

  • Maintaining a safe, fun and healthy work environment for our team.
  • Builds a strong focus on instilling a health and safety culture in our stores.
  • Compliance with all Public Health standards including but not limited to; Provincial and regional COVID mandates, HACCP logs, temperature controls and food safety regulations.
  • Builds a solid working relationship with the F& B Director and management team to obtain support and counsel when needed.
  • Where appropriate, follow up and successfully resolve any guest concerns and ensure root cause is identified and corrected.

Administrative Duties:

  • Interviewing and hiring support roles as business dictates, builds a proactive plan to ensure we always have the right people in the right place.
  • Administrative duties including invoicing, ordering and managing employee timecards.
  • Achieves all financial targets as set forth by the organization; labour and cost of goods sold.
  • Ensures proper pars, inventory and ordering levels are maintained to avoid product shortages and/or surpluses.
  • Manages monthly food inventory in Optimum Control and respective software programs; collaborating with the Chefs to promote their professional development.
  • Manages and submits monthly reporting on all financial targets to the F & B Director.
  • Building cost-effective weekly schedules for the culinary crew that maintain balance for the business and quality of life for the associates.
  • Follows all standards, policies and procedures as set forth by the organization.


  • 8 years experience managing the operation of a large, multi-unit commercial food and beverage establishment.
  • Business and project management experience required.
  • Requires advanced knowledge of the principles and practices within the Food & Beverage/Hospitality profession. This includes experience in human resources management, including the knowledge required for management of people, employee training and leadership experience.
  • Experience resolving complex problems.
  • Expertise in food preparation acquired through progressive Chef positions in appropriate establishments, proven experience in the creation and implementation of new menus and food offerings, including those tailored to accommodate dietary and cultural needs. 

This role requires a clear criminal record check.
