Position Overview:
As a Tortilla Prep team member at Seis Kitchen, you will be responsible for crafting fresh tortillas from scratch each day. This specialized role includes preparing the dough, hand-pressing each tortilla, and ensuring every tortilla meets our high standards of quality and consistency. Your work directly contributes to the authentic flavors and experience we deliver to our guests.
Responsibilities including but not limited to:
· Prepare fresh masa and tortilla dough daily according to Seis Kitchen recipes and specifications.
· Hand-press tortillas using traditional tortilla presses and cook them to the proper texture and doneness.
· Ensure consistent shape, thickness, and quality in every tortilla made.
· Maintain cleanliness and organization of the tortilla prep station and equipment throughout the shift.
· Monitor dough consistency and adjust as needed to maintain quality.
· Label and store prepared dough and tortillas properly to ensure freshness and minimize waste.
· Follow all food safety and sanitation standards, including safe handling of ingredients and cooking surfaces.
· Communicate with kitchen staff and management to coordinate tortilla production and inventory needs.
· Assist with ingredient preparation related to tortilla making as needed.
· Perform additional prep or cleaning duties as assigned by management.
Requirements:
· Previous experience in tortilla making or dough preparation preferred but not required.
· Strong attention to detail and consistency in hand-prepared food items.
· Ability to work independently and efficiently with minimal supervision.
· Willingness to follow established recipes and procedures precisely.
· Ability to work early morning shifts and maintain punctuality.
· Must be able to lift and carry up to 50 pounds and stand for extended periods.
Physical Requirements:
· **Standing for Extended Periods:** Tortilla prep requires standing throughout the shift to prepare dough, press, and cook tortillas.
· **Repetitive Motion:** The role involves consistent hand-pressing and manual handling of dough, requiring hand and wrist strength and dexterity.
· **Lifting and Carrying:** Must be able to lift heavy bags of flour, containers of dough, and kitchen equipment up to 50 pounds.
· **Working in a Warm Environment:** Tortilla preparation may take place near hot griddles or stoves, requiring comfort in warm conditions.
· **Attention to Timing and Detail:** Successful tortilla prep relies on visual and tactile cues, requiring focus and sensory awareness.
