About the Role
The Sous Chef supports the Resort Chef in leading daily kitchen operations and the staff meal program at Moutcha Bay Resort. This role supervises kitchen staff, ensures consistent food quality and safety, and maintains efficient workflows across all services. Acting as Chef-in-Charge when required, the Sous Chef plays a key leadership role in delivering an upscale culinary experience and supporting overall resort operations.
Key Responsibilities
· Execute culinary and staff meal programs by preparing menu items to established recipes, standards, and timelines.
· Ensure food quality, consistency, and presentation by enforcing culinary standards during all services.
· Maintain efficient kitchen workflow by organizing prep, mise en place, and station readiness each shift.
· Support breakfast and full-service operations by opening, closing, and working service as required.
· Lead the kitchen in the Resort Chef’s absence to ensure uninterrupted operations and decision-making.
· Supervise and develop kitchen staff through training, coaching, and performance management.
· Manage scheduling, purchasing, and inventories to ensure coverage, readiness, and cost control.
· Reduce food waste and manage food costs by applying portion control, FIFO, and waste monitoring practices.
· Coordinate with front-of-house leadership to ensure accurate, timely, and seamless service.
· Uphold food safety, sanitation, and workplace safety standards through daily oversight and audits.
Qualifications
Required:
· Legally entitled to work in Canada
· Red Seal certification or equivalent
· Excellent kitchen management and leadership skills
· Computer literacy including a strong grasp of Microsoft Word, Outlook, and Excel
· Food Safe Level 1
· WHMIS certification
Preferred:
· OFA1 (Occupational First Aid Level 1)
