Position Summary:

As a Manager at Paco's, you will lead and oversee daily restaurant operations, ensuring that the team delivers exceptional food, outstanding service, and a welcoming environment for guests. Managers are key in setting a positive example, motivating staff, and implementing Paco’s commitment to excellence and customer satisfaction.


Position Responsibilities:

  • Leadership and Team Management

    • Oversee hiring, training, scheduling, and development of team members.

    • Provide mentorship and feedback to create a collaborative and high-performing team.

    • Maintain a positive work culture by modeling and enforcing Paco’s Core Values.

  • Operational Management

    • Ensure daily restaurant operations run efficiently, including opening and closing procedures.

    • Monitor food preparation, cleanliness, and guest service to meet brand standards.

    • Maintain accurate inventory levels and manage ordering processes.

  • Guest Experience

    • Resolve guest complaints promptly and professionally.

    • Cultivate a culture of hospitality to provide an exceptional dining experience.

    • Collect and analyze guest feedback to identify areas for improvement.

  • Financial Accountability

    • Manage labor, food, and operational expenses to align with budget goals.

    • Track sales and profitability, offering strategies to improve performance.

    • Ensure cash handling procedures are followed and report discrepancies.

  • Safety and Compliance

    • Adhere to food safety, health, and cleanliness regulations.

    • Oversee equipment maintenance and operational compliance.

    • Enforce all policies, procedures, and safety protocols within the restaurant.


Qualifications:

  • Must be 18 years or older (age requirements may vary by location).

  • Previous management or leadership experience in a restaurant or similar environment is required.

  • Strong interpersonal, organizational, and problem-solving skills.

  • Proven ability to motivate and manage a team.

  • Flexible availability, including evenings, weekends, and holidays.

  • Ability to work in a fast-paced, high-stress environment while maintaining a calm demeanor.

  • Good understanding of financial principles, including profit and loss (P&L) management.

  • Commitment to Pacos’ values, service philosophy, and brand integrity.


Key Performance Indicators (KPIs):

  • Operational Efficiency:

    • Food Cost Percentage: Maintain food costs as a percentage of sales within the company-approved range (typically between 26%–30%).

    • Labor Cost Percentage: Monitor and manage labor costs, aiming for efficiency while ensuring adequate staffing levels.

    • Food Cost Percentage: Manage food costs to remain within 28% to 32% of total sales.

    • Labor Cost Percentage: Monitor and maintain labor costs within the target range (commonly around 25%-30% of total sales).


  • Sales Performance: 

    • Same-Store Sales Growth: Achieve a targeted percentage of year-over-year sales growth.

    • Sales Per Labor Hour (SPLH): Track performance against a benchmark to ensure effective use of labor hours. 


  • Customer Satisfaction: 

    • Customer Satisfaction Score (CSS): Utilize customer surveys to maintain an average score above the target (e.g., 90%+).

    • Net Promoter Score (NPS): Measure customer loyalty and willingness to recommend, aiming for a score indicative of strong customer advocacy.

    • Customer Satisfaction Score (CSS): Maintain a score above 90% on customer satisfaction surveys administered by the company.

    • Net Promoter Score (NPS): Strive for a Net Promoter Score that indicates strong customer loyalty (typically targeted at 70+).


  • Employee Engagement and Retention:

    • Employee Turnover Rate: Aim for a low turnover rate (e.g., less than 25% annually) by fostering employee satisfaction and career growth.

    • Employee Satisfaction Index: Conduct regular surveys to ensure team members are engaged and satisfied (target above 80%).

    • Employee Turnover Rate: Aim for an annual employee turnover rate below 30% through engagement strategies and retention efforts.

    • Employee Satisfaction Index: Utilize employee satisfaction surveys to achieve a score above 80%.


  • Financial Performance: 

    • Profit Margin: Monitor overall profit margins against predetermined targets set by Pacos corporate (usually around 15%-20%).

    • Operating Expenses as a Percentage of Sales: Manage operating expenses to achieve an established target percentage, ensuring the balance between quality service and costs.

  • Sales Performance:

    • Same-Store Sales Growth: Achieve a targeted percentage of year-over-year sales growth, typically exceeding 5%.

    • Sales Per Labor Hour (SPLH): Maintain or exceed the benchmark target for sales per labor hour to optimize staff performance.

    • Profit Margin: Maintain overall profit margins target (usually around 15%-20%) based on P&L reports.

    • Expense Management: Keep operating expenses (including non-food costs) under control as a percentage of gross sales, targeting below 15%.


  • Compliance and Quality Control: 

    • Health and Safety Inspection Scores: Achieve a score of 95% or higher on health and safety inspections conducted by corporate or local health departments.

    • Mystery Shop Scores: Consistently receive scores above target (e.g., 90%+) in company-led mystery shopper assessments.

    • Health and Safety Inspection Scores: Achieve a minimum score of 90% on health and safety inspections by health departments and Pacos corporate.

    • Mystery Shopper Scores: Consistently maintain an average score above 90% on mystery shopper reports evaluating service 


  • Community Engagement: 

    • Community Involvement Metrics: Track participation in local events and community programs, establishing targets for engagement (e.g., number of events per quarter).

    • Local Brand Awareness: Measure increases in local brand awareness through surveys and community feedback after marketing initiatives.

    • Community Event Participation: Lead and engage in a certain number of community events or outreach initiatives each quarter (e.g., at least 2-3).

    • Local Brand Awareness: Measure improvements in brand awareness through community feedback before and after marketing initiatives.
