Production/Cook- FT
SUMMARY
Portions and/or serves food to residents, guests and staff. Perform post-meal dining room and kitchen clean up.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
Healthcare:
Assemble and deliver floor supplies according to posted standards.
Reads spreadsheets to determine amount and kinds of food to be portioned.
Gathers numbers, dishes and other portioning devices and uses to accurately portion hot and cold food into individual serving dishes or plates.
Takes hot carts and cleans dishes to assigned neighborhoods.
Sets dining room, steamtable, beverage cart and refrigerator/ice bars for meal service.
Reads printed menus or tray tickets and serves appropriate food or beverage item.
Assures plates and china are at appropriate temperature before, during and at the end of service.
Dishes food for each resident per menu ticket.
Cleans steamtable and sends hot box to dish room.
Either reports to dish room or cleans dining rooms as assigned.
Main Dining Room:
· Sets dining room and wait stations for each meal.
· Takes resident food orders, serves meal according to standards of service.
· Clears tables and cleans dining room and wait station.
· Wraps silverware
· Stocks wait stations
· Records resident attendance to meal
· Expedites food from kitchen to dining room
Cafeteria:
· Sets up steam table, salad bar and cold bar for meal service at the beginning of day.
· Prepares short orders as requested by customers
· Keeps service area neat and clean throughout meal service
· Prepares and stores food items for night shift staff
· Preps food for pizza, cold bar and salad bar
· Operates cash register
· Cleans up steamtable, salad bar and cold bar for meal service at the end of day.
Coordinator:
· Sets dining room and wait stations for each meal
· Takes residents food orders, serves meal according to standards of service
· Clears tables and cleans dining room wait station
· Wraps silverware
· Stocks wait station
· Records residents attendance
· Helps on service line in evening
· Oversees and checks out servers in evening
All:
· Wash and store dishes, utensils, pots, pans and cooking equipment according to department policy
· Dispose of refuse according to department policy and procedures
· Put food and supplies away according to department policy and procedures
· Perform general cleaning as scheduled
· Complete duties within prescribed time limits
· Maintain organized and sanitary work area
·
Participate in department and organizational
meetings, training, in-services and educational programs.

EDUCATION and/or
EXPERIENCE
Less than high school education.
LANGUAGE SKILLS
Ability to read and comprehend simple instructions, short correspondence
and memos. Ability to write simple
correspondence.
MATHEMATICAL SKILLS
Ability to add and subtract two digit numbers and to multiply and divide
with 10’s and 100’s. Ability to perform
these operations using units of American money and weight measurement, volume
and distance.
REASONING ABILITY
Ability to apply common sense understanding to carry out simple on-or
two-step instructions. Ability to deal
with standardized situations with only occasional or no variables.

While performing the duties of this job, the employee is frequently exposed to extreme heat, wet and/or humid conditions, moving mechanical parts, and extreme cold. The noise level in the work environment is usually moderate, but occasionally may be exposed to loud noises.
