Prep Cook
The prep cook’s primary responsibility is to create and portion the ingredients needed for individual dishes and support the kitchen team as needed. This job description cannot identify all tasks that are expected, and other tasks may be assigned as needed.
Essential Functions
- Must be able to rapidly move in the prep line and other areas of the back-of-the-house, including to and from equipment in an orderly and efficient manner and have agility to move between other employees and the equipment.
- Always clock in upon starting your shift. 5 minutes before shift starts.
- Ensure refrigeration is at the proper temperature.
- Properly fill sanitizer buckets.
- Distribute trash cans with appropriate liners.
- Rotate product to ensure that only the freshest ingredients are used and none are wasted.
- Prepare all ingredients as needed to support the kitchen operations.
- Clean all areas in the kitchen from flour and debris while making dough. Clean the dough mixer, place water inside with a cleaner solution and scrub the sides of the bowl ensuring all wet/dried dough is removed from the mixing bowl and hook. Dry the machine ensuring everything is clean and ready for use the next day.
PHYSICAL DEMANDS (Essential Functions)
- Must be able to stand and exert well-paced mobility for at least eight (8) hours in length.
- Must be able to exert a well-paced ability to reach other areas, including on different floors of the restaurant on a timely basis.
- Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening, and hearing ability and visual acuity.
- Must be able to push, pull, and move equipment weighing up to 250 pounds.
- Talking and hearing occur continuously in the process of communicating with guests, other managers and subordinates.
- Requires manual dexterity to handle and operate equipment (i.e., patio heaters, glass washers, dishwashers, stoves, fryers, etc.)
- Requires bending or twisting.
- Requires using hands to handle, grasp, control, or feel objects, tools or controls.
- Requires work in an outdoor / indoor environment with temperatures from -10F to up to +110F
