A PM Cook prepares and cooks food to established quality, presentation, and portion standards for afternoon and evening shifts, cleans and maintains kitchen areas, manages kitchen equipment, and ensures proper food storage and sanitation while adhering to safety guidelines and assisting with duties like inventory and food orders. This role often requires strong knife skills, the ability to work in a fast-paced environment, excellent communication, and physical stamina for standing for long periods and lifting.

- Adhere to all local health guidelines in regard to food prep, sanitation and delivery
- Respond to any reasonable request made by the Executive Chef or General Manager
- Master all the stations in the kitchen including AM and PM
- Supervises all culinary stations
- Food items are produced by the ability to bake, roast, broil, steam, fry, grill, chop, measure, and mix ingredients, by hand or using power operated equipment
- Record/verify temperature control checks (HACCP)
- Check quality of work of the hourly employees
- Participates in Moments of Service Audit Program
- Reasonable requests of management as directed
- Strong working knowledge of accepted standards of sanitation
- Operating multiple stations within the kitchen (Sauté, Grill, Garde Manger, others as assigned)
- Maintaining cleanliness of all hot and cold preparation stations, and all surrounding culinary areas
- Organizing and preparing both current and future requisitions
- Effectively communicating relevant menu and dietary changes between all shifts
- Opening Shift - Turn on specified equipment (i.e., ovens, deep fryers), fill steam table and unlock secured areas (i.e., reach-ins, walk-ins)
- Focus on work the grill and sauté stations
- Report any maintenance or repairs needed to the Executive Chef
- Follow departmental policies restaurant rules and regulations set forth in the Employee Handbook and by management
- Prepare all pastry items for the restaurant according to specifications
- interior of hotel, in restaurant and kitchen areas, with exposure to humidity, steam and extreme temperatures
- Required Food handlers prior to first day
- Some restaurant/hotel experience
- Minimum of 1 yr experience in fast paced, culinary environment
- Available to work PM shifts including weekends and holidays
- Serve safe Food Handler certification must be completed before starting work
- must be able to work weekends and holidays
- MUST be able to life at least 50lbs
- MUST have a legal driver's license
