Position Summary

The Food & Beverage Director is directly responsible for managing F&B staff and overseeing the daily operations of the hotel bar and/or restaurant and ensuring guests have a favorable experience. Manage all inventory, including food and beverages, supplies and other equipment. Monitor quality of service by observing or asking customers about needs; resolve customer complaints about service, food quality, etc. by assessing the problem and taking immediate action.

Position Type and Expected Hours of Work

This is a full-time benefit eligible position. Operational demands for this position require variations in shift days, starting times and hours worked in a week.

Essential Job Functions

· Achievement of budgeted food sales, beverage sales, labor costs and profitability.

· Supervise all F&B personnel.

· Respond to guest complaints in a timely manner.

· Prepare the F&B budget and monitor department performance with respect to the same.

· Perform any necessary follow-up, including forecasting.

· Monitor industry trends, take appropriate action to maintain competitive and profitable operations.

· Keep immediate supervisor fully informed of all problems or matters requiring his/her attention.

· Coordinate and monitor all phases of Loss Prevention in the F&B department.

· Prepare and submit required reports in a timely manner.

· Organize and conduct department meetings on a regular basis.

· Monitor quality of service and product.

· Cooperate in menu planning and preparation.

· Ensure timely purchase of F&B items, within budget allocation.

· Oversee operations of the employee cafeteria.

· Step into any role needed within that department if short staffed

· Ensure compliance with all local liquor laws, and health and sanitation regulations.

· Ensure departmental compliance with SOP's.

· Ensure the training of department heads on SOP's, report preparation, technical job tasks.

· Interview candidates for front-of-house F&B positions and follow standards for hiring approvals.

· Conduct and/or attend all required meetings, including pre-convention and post-convention meetings.

· Ensure overall guest satisfaction.

Work Environment

This position will be located at a hotel and primarily work in the kitchen or restaurant/bar area.

· Frequently required to stand, walk, sit, use hands to handle or feel objects, tools or controls, reach with hands and arms, climb stairs, balance, stoop, kneel, crouch, crawl, talk, or hear.

· Occasionally lift and/or move up to 20 pounds and pushing and/or pulling approximately 50lbs.

· Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.

Travel

No travel is expected for this position. Travel for annual training and conferences may be required.

Required Education and Experience

· At least 5 years of progressive experience in a hotel or related field required.

· Must have knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations.

· Effective oral and written communication skills

· Must be able to work a flexible work schedule as the hours for this position will vary.

· Must have a valid driver’s license.

· Must be fluent in English.
