Job Overview:

The F&B Manager has full responsibility to oversee daily or nightly Food and Beverage operations, provide leadership necessary to achieve stated objectives in sales, costs, employee retention, guest service and satisfaction, food quality, cleanliness, and sanitation.

Responsibilities and Duties:

  • Promotes, work, and acts in a manner consistent with the mission of Ace and Cash Casinos.
  • Ensures that all restaurant policies, procedures, standards, specifications, guidelines, and training programs and followed and completed on a timely basis.
  • Achieves company objectives in sales, service, quality, appearance of facility and sanitation and cleanliness through training of employees and creating a positive, productive working environment.
  • Ensures compliance with all federal, provincial, county, and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees, and guests.
  • Enforces and control outlined uniform standards.
  • Understands and comply with current labour, food, and beverage budgets.
  • Controls cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with casino policies and procedures.
  • Ensures controls in place for electronic/cash transactions.
  • Investigates and resolves complaints regarding food quality & service.
  • Performs some food preparation or service tasks, such as cooking, clearing tables, and serving food and drinks when necessary.
  • Is knowledgeable of restaurant policies regarding personnel.
  • Administers prompt, fair and consistent corrective action for violations of company policies, rules, and procedures.
  • Reviews work procedures and operational problems to determine ways to improve service, performance, or safety.
  • Attends all scheduled employee meetings and offers suggestions for improvement.
  • Coordinates with and assists fellow employees to meet guest’s needs and support the operation of the restaurant.
  • Fills-in for fellow employees where needed to ensure guest service standards and efficient operations.
  • Monitors employee and guest activities to ensure liquor regulations are obeyed.
  • Develops, plan, and implements F&B Outlet marketing, advertising and promotional activities and campaigns.
  • Upholds facility appearance standards.
  • Works with the other casino departments on promotions and VIP events.
  • Estimates food, liquor, wine, and other beverage consumption to anticipate amounts to be purchased or requisitioned.
  • Works with culinary department to create specialty dishes and develop recipes to be used in dining facilities.
  • Other duties as required.

Education and Experience:

  • Minimum of 5 years’ experience as supervisor/manager in the hospitality environment.
  • Experience in back of the house and front of the house.
  • Basic food safety required.
  • Proserve and Reel Facts Certification from AGLC.
  • Casino, hotel, or resort experience preferred, but not required.
Skills and Abilities:

  • Ability to work well under pressure in a fast-paced environment.
  • Ability to work cohesively as part of a team.
  • Ability to communicate effectively.
  • Ability to focus attention on guest needs, always remaining calm and courteous.

Job Requirements:

  • Ready and willing to work a flexible schedule, including graveyards, weekends, and holidays. The hours of work will be based on operational needs.
  • Knowledge of AGLC Terms & Conditions and Operating Guidelines.
  • Knowledge and ability to clearly explain operating house rules to guests and employees.
  • Ability to work cohesively as part of a team.
  • Ability to communicate effectively.
  • Ability to focus attention on guest needs, always remaining calm and courteous.

Work Conditions and Physical Requirements:

  • Walk/stand – Must be able to walk/stand throughout much of the shift throughout all outlets of the Casino.
  • Talk/hear – must be able to detect, determine, identify, observe, inspect, and assess. This positions frequently communicates with guests and employees throughout the entirety of the shift. Must be able to exchange accurate information and professionalism in these situations.
  • Occasional kneeling, pushing, and pulling.
  • Occasional ascending or descending ladders, stairs, and ramps.
  • Frequent lifting and carrying up to 50 lbs.
  • Works in an indoor, fast-paced environment.
  • Advanced attention to detail.
  • Ability to work under pressure.
