POSITION OVERVIEW

The Executive Chef is the culinary leader of Penryn Grill, responsible for menu creation, kitchen operations, food quality, team leadership, and cost control. This role ensures that every guest receives an outstanding dining experience consistent with the Penryn Grill brand.


KEY RESPONSIBILITIES

·         Lead all back-of-house operations, including prep, line, expo, and closing procedures

·         Create, test, and implement new menu items, daily specials, and seasonal offerings

·         Maintain consistent food presentation, quality, and portion standards

·         Train, coach, schedule, and supervise all kitchen staff

·         Maintain a clean, safe, compliant kitchen environment (food safety, sanitation, equipment)

·         Monitor inventory levels; order food, supplies, and manage vendor relationships

·         Control food and labor costs through efficient planning and management

·         Oversee prep lists, production schedules, and recipe adherence

·         Manage special events, pairings, themed menus, and catering items

·         Work closely with ownership on budgeting, forecasting, and profitability

·         Maintain proper kitchen logs, temp logs, waste logs, and cleaning schedules

·         Ensure compliance with all local, state, and federal food safety regulations

·         Address staffing needs, hiring, and performance evaluations

·         Lead by example with professionalism, communication, and teamwork


WORK ENVIRONMENT

·         Fast-paced, hands-on kitchen environment

·         Requires weekend, evening, and holiday availability

·         Ability to lift 40+ lbs and stand for extended periods


QUALIFICATIONS

·         3-5+ years in a culinary leadership role (Executive Chef, Head Chef, or Sous Chef)

·         Strong skills in cooking techniques, menu development, and plating

·         Experience with cost control, ordering, and budgeting

·         Ability to lead and motivate a kitchen team

·         Excellent communication and organization

·         ServSafe Manager Certification (or ability to obtain)
