Summary of the Role and Responsibilities: The Catering Chef is a hands-on working role that leads by example in production, training, and team building in all aspects of the back of the house responsibilities. This role will oversee food preparation and food delivery for weddings and corporate/social events. Support the Executive Chef and Leaders of Culinary Operations in managing the kitchen(s).
Responsibilities:
- Promote and portray the VIVÂMEE Values.
- Know, understand, and adhere to company established policies and procedures.
- Preparation and service of all catering food items.
- Service of all banquets, weddings, and special events.
- Preparation of all cold foods and appetizers.
- Maintains cleanliness of kitchen.
- Assist and help coordinate all menu planning and implementation.
- Inventory of food and dry goods.
- Ensuring inventory is secure.
- Preparing beginning and ending inventory accountability sheets at a frequency specified by the Executive Chef.
- Establish controls to minimize food and supply waste and theft
- Monitors and maintains use of safe food handling procedures as well as a safe working environment by using correct food handling skills and food safety guidelines.
- Professional appearance and manner, good character to work in a fast-paced environment. Positive, honest and energetic work ethic.
- Manages employee schedules.
- Proper rotation of stock.
- Reviewing and approving employee timecards.
- Assist in recruitment, training and discipline of all kitchen staff.
