We are currently recruiting versatile, adventure seeking Kitchen Supervisor for term and permanent positions at the Ptarmigan and Dan's Diner!
JOB SUMMARY
The Kitchen Supervisor supports the Kitchen Manager / Sous Chef by overseeing daily back-of-house operations, ensuring food quality, safety, and efficiency standards are met. This role includes supervising and training kitchen staff, maintaining a clean and organized workspace, managing inventory, and ensuring compliance with health and safety regulations. The Kitchen Supervisor also assists with coordinating team schedules, monitoring kitchen performance, and supporting special events and menu execution. Through strong leadership and effective communication, the Kitchen Supervisor fosters a positive and productive kitchen environment to deliver excellent dining experiences and operational efficiency that align with Frontiers North’s (FN) values of sustainability and corporate social responsibility.
ESSENTIAL DUTIES AND RESPONSIBILITIES
Operational Support:
- Assist in executing daily back-of-house (BOH) operations, including food preparation, cooking, and service.
- Ensure adherence to established recipes, portion control, and presentation standards.
- Supervise cleaning protocols and ensure the kitchen meets operational standards during shifts.
Staff Coordination:
- Oversee BOH staff during shifts to maintain productivity and efficiency.
- Conduct pre-shift briefings to communicate daily priorities, updates, and expectations.
- Support training and onboarding of new team members in kitchen procedures and safety guidelines.
Food Safety and Quality Control:
- Ensure strict adherence to food safety, sanitation guidelines, and provincial health regulations.
- Monitor and lead by example in maintaining kitchen cleanliness and organization.
- Supervise equipment maintenance, including refrigeration, hotlines, and dishwashers.
Inventory and Cost Control:
- Assist with inventory management by monitoring stock levels and reporting shortages.
- Reduce food wastage through effective portioning and preparation methods.
- Coordinate with the Kitchen Manager / Sous Chef to ensure timely ordering of supplies.
Team Leadership:
- Maintain a positive work environment through effective communication and conflict resolution.
- Ensure compliance with applicable employment standards, such as breaks and overtime policies.
- Motivate and encourage staff to perform at their best during high-pressure situations.
- Act as a point of contact for BOH team concerns during shifts.
Event and Special Coordination:
- Work with the Kitchen Manager / Sous Chef to prepare for group bookings, special menus, or events.
- Ensure seamless execution of event-specific requirements through proper staff and resource allocation.
SPECIFIC KNOWLEDGE, SKILLS, AND ABILITIES
- Post-secondary education in culinary arts or an acceptable combination or education and experience.
- 1+ years of experience leading a line in a commercial kitchen, previous supervisory experience is an asset.
- 5+ years of culinary experience in a commercial kitchen.
- Red Seal Certification is an asset.
- Valid Food Handlers certification.
- Valid driver’s licence is an asset.
- Effective written and verbal communication skills in English; other languages are an asset.
- Strong time management skills and the ability to prioritize tasks with minimal supervision.
- Flexible and resourcefulness to problem solve challenges that arise from working in a remote, northern location.
- Excellent interpersonal skills, empathy, and patience.
- Must be able to work individually and as part of a team.
SPECIAL CONDITIONS OF EMPLOYMENT
- Job is in Churchill, Manitoba, a remote, northern location.
- Commercial kitchen setting.
- Must be able to stand for 8-12 hours per day.
- Must be able to safely lift 23 kilograms (50 pounds).
- Must be able to work near a variety of potential food allergens including, but not limited to, citrus, strawberries and other fruits and vegetables, peanuts and other nuts and legumes, pork, poultry, beef, bison, shellfish/seafood, fish, and other meats.
- Dress code is in effect.
- Must remain free of impairment from drugs, alcohol, or other mental and physical conditions while on duty and/or on call to work.
- The ability to travel to Churchill, Manitoba by air and/or train is required.
- Closed-toe, slip-resistant, comfortable footwear is required.
- Shared staff housing is available.
- Overtime may be required during evenings, weekends, and on holidays.
- Must be legally entitled to work in Canada.
