Sous Chef / Kitchen Manager

We are seeking a professional Kitchen Manager / Sous Chef who leads with integrity, accountability, and a safety-first mindset. This role is responsible for enforcing all food safety, sanitation, and workplace safety standards, including mandatory use of Personal Protective Equipment (PPE) and strict adherence to operational procedures.
This is a leadership position for someone who sets the standard — not someone who needs to be managed.
Position Summary
The Kitchen Manager / Sous Chef oversees daily kitchen operations, leads the line during service, and ensures all systems, standards, and SOPs are executed consistently. This role works closely with the Food and Beverage Director and the Executive Chef to maintain a clean, safe, and high-performing kitchen.
Core Responsibilities
Food Safety, Sanitation & PPE Compliance
Enforce all food safety and health department regulations without exception
Ensure proper and consistent use of PPE:
Gloves (correct use and frequent changing)
Aprons (clean and worn properly)
Non-slip footwear
Cut gloves when required
Maintain strict food handling, labeling, storage, and FIFO practices
Ensure proper handwashing and hygiene standards at all times
Complete, verify, and hold team accountable for all logs (temperature, cleaning, safety)
Address and correct unsafe behavior immediately
Workplace Safety & SOP Enforcement
Maintain a clean, organized, and hazard-free kitchen environment
Enforce all kitchen SOPs including opening, closing, cleaning, and equipment procedures
Ensure compliance with daily and weekly checklists
Identify and correct hazards proactively (wet floors, clutter, improper tool use)
Ensure safe use of knives, equipment, and chemicals
Document incidents, near-misses, and corrective actions
Kitchen Operations & Execution
Lead the line during service with focus on timing, communication, and quality
Ensure consistency in recipes, portions, and presentation
Oversee prep execution, production levels, and station readiness
Maintain a high standard of cleanliness and organization across all stations
Communicate and resolve equipment or product issues quickly
Leadership & Accountability
Train, coach, and develop team members on standards and expectations
Hold all staff accountable for safety, performance, and professionalism
Address performance or behavior issues immediately and appropriately
Maintain a respectful, professional work environment at all times
Lead by example — this is a working leadership role
Inventory, Organization & Cost Awareness
Assist with inventory counts, ordering, and receiving
Ensure proper storage, labeling, and rotation of all products
Minimize waste through proper handling and planning
Opening & Closing Excellence
Ensure all opening and closing procedures are executed fully and correctly
Verify completion of all cleaning, safety, and operational checklists
Leave the kitchen set up for success for the next shift
Qualifications
2+ years in a kitchen leadership role (Sous Chef or Kitchen Manager)
Strong working knowledge of food safety, sanitation, and kitchen systems
Proven ability to lead a team in a high-volume environment
Strong organizational and communication skills
Ability to remain professional and composed under pressure
Flexible schedule (including nights, weekends, and holidays)
Professional Standards (Read Carefully)
Safety violations, disregard for PPE, or failure to follow procedures will not be tolerated
Unprofessional behavior, lack of accountability, or inability to work as part of a team will not be a fit for this role
This position requires consistency, reliability, and ownership on every shift
